Antinori Castello della Sala Muffato della Sala White Blend Umbria IGT. A warm, dry spring followed a mild winter, causing vine development to occur slightly ahead of schedule. Temperatures during July and August were consistently hot, without extreme heat spells, which allowed the grapes ripened gradually and steadily. The foggy mornings and sunny afternoons in September and October caused perfect development of botrytis, and consequently, excellent concentration of sugars and aromas. Harvest began in the last 10 days of Ocober with the Traminer grapes, followed by Riesling, Sauvignon Blanc, and ending with Grechetto at the end of November. The grapes come from vines planted at Antinori’s Castello della Sala estate at elevations of 656 - 1,312 feet. The sedimentary soils are rich in marine fossils with some clay. Muffato della Sala is produced from botrytized grapes grown on vineyard plots where micro-climates favor noble rot. Muffato della Sala was first released in 1987 and is produced in very limited quantities. Occasional rain alternating with sunshine encouraged the development of noble rot, which reduces the water content of the grapes, concentrating the sugars and flavor components. The botrytized grapes from these plots are generally harvested later than the normal vintage. After soft pressing, the must fermented for 18 days at a temperature not exceeding 61 degrees Fahrenheit. The resulting wine was aged in Allier and Tronçais French oak barriques for 6 months, before being blended and bottled.
