A mild winter and spring caused the vine’s vegetative phases to take place earlier than normal. After a hot early summer, August was mild and cool, and vine development returned to normal. September and October were characterized by hot sunny days and cool nights, contributing to the superior quality of the grapes. The Merlot and Syrah were harvested from the first to third weeks of September. The Sangiovese grapes were harvested between the third week of September and the first week of October. The wines of this vintage show intense color and typical aromas with beautiful structure. Introduced in 1988 with the 1985 vintage, Pèppoli Chianti Classico DOCG is the archetypal modern Chianti Classico. Pèppoli combines the complexity and structure of a well-aged Riserva with the fruity fragrance of a young wine. This style is made possible by a unique microclimate where east-northeast facing vineyards are planted in a small heat-retaining valley on mineralrich, rocky soils that are perfect for growing very fruity, lively Sangiovese. The wine further benefits from the use of better Sangiovese clones, severe grape bunch selection, and delayed harvest when necessary. The wine is produced on Antinori’s Pèppoli Estate, which extends over 247 acres, 136 of which are under vine. The grapes were harvested, and the three varieties were fermented separately in stainless steel vats to preserve unique aromatic and flavor profiles. From the very beginning of the vinification process, it was clear that the quality of the grapes was very high. After malolactic fermentation, the Sangiovese, Merlot and Syrah were blended and placed into large Slovenian oak casks, preserving the fruity aromas from fermentation and sweetening the tannins. Ten percent of the wine went into American oak barrels which were used to complete the range of aromas. After nine months of aging in oak, the wine was bottled and aged before release.
