Fonseca’s three vineyards—Quinta do Panascal, Quinta de Cruzeiro and Quinta de Santo António—all form the backbone of Fonseca’s Late Bottled Vintage Portos, produced in excellent years when a general vintage is not declared. In the winery, the newly developed, robotic “Port Toes” technology for treading the grapes allows the winery to maximize the quality of the fruit by imitating the traditional action of human feet and avoiding damage to the bitter grape seeds. Fermentation is halted by the addition of grape spirits before all the residual sugar has been fermented, creating a sweet, fortified wine. For this wine, some of the best reserves from the 2007 harvest were stored in large vats and then aged for five years in neutral oak. This blend of outstanding quality was bottled without filtration to allow further evolution in the bottle. Winter was cold and dry (only 258mm of rain at Pinhão from Nov.-Mar.). A wet April ensured ground water reserves were sufficient for the coming harvest. Temp's for the '08 growing season were remarkably similar to '07, lower than average, with a mild August. Moderate weather and the dry summer (only 18.2mm of rain at Pinhão from May-August) resulted in markedly delayed growth by end of August. On Fonseca’s Quintas, picking began September 22-28. With no further rain until middle of October, hot days with cold nights created perfect conditions for final ripening and fermentations. Sugar levels started low, but increased significantly as the vintage progressed and grapes remained healthy. Dense, dark chocolate and black fruit aromas, with a licorice note. Bitter chocolate and blackberry fruit flavors are big, structured and textural, with volume and layers of flavor. The wonderfully palpable, “chewy” mouthfeel precedes a long finish. A perfect end to the meal, this benefits from decanting. A generously-proportioned glass will show its rich fruity nose best. Excellent with full-flavored blue cheeses (Stilton or Roquefort), chocolate and berry fruit desserts.
