Quick Overview

While still young, it gets rounder by the minute, so just imagine its beauty over the years. Bright is the first word that comes to mind, washed with blackberry and cedar spice. A great value for a labor-intensive wine that starts with hand-picked and -sorted berries and spends 18 months in 225-liter American oak barrels.
Cabernet Sauvignon

Beautifully balanced, with attractive aromas of black fruit and spice, this smooth, ready to drink cabernet sauvignon is made with the same care as the highest quality, traditionally crafted Bordeaux styled wines. Our grapes are hand-picked and then sorted by the berry for consistent quality and flavor. JUSTIN Cabernet Sauvignon then spends more than a year in traditional small oak barrels to impart a depth and complexity, expressing the influence of ancient limestone soils and the unique climate of Paso Robles and bringing out a classic cabernet character in this exceptional wine . Clear with a medium ruby, purple core and light violet rim. Aroma: Wtih medium-plus intensity, it’s a beautifully classic cabernet sauvignon mix of ripe blackcurrant, black and red cherries with vanilla, cedar, sweet tobacco, and licorice accents. Palate: Medium-plus body with dark fruit of cassis and black cherry on the entry. Barrel notes of vanilla and cedar with savory black tea and herbal notes come through on the mid-palate. The finish is long and clean with lingering bright cherry and spice of sassafras and licorice, surrounded by smooth firm to medium tannins. The 2017 vintage began with a cold, dry winter and a cool spring which delayed budbreak until mid-April, about three weeks later than usual, minimizing the chances of damage from a late frost. The weather warmed in May causing good growth on the vines. Warm temperatures in early June and a very hot July moved things along with veraison beginning a few weeks early in late July. August started a little cooler, but soon warmed to over 100° each day for more than a week helping us to catch up on ripeness and maturity. September was very hot, with beautiful cool fall evenings and nights, and some moderation beginning in early October. The first rainfall occurred on October 10th but it did not affect the harvest as it warmed up again from late October through early November. We received the first real winter cold and rain on November 11th just as we were bringing in the last of the cabernet, only a few weeks later than normal.
